  EHN 1102 — Environmental Health Nursing applies Florence Nightingale's environmental theory to the major environmental health challenges facing Kenyan communities. The environmental concepts chapter defines the four types of environment (biological, physical, socio-cultural, and political-economic) and links each to specific health outcomes, then covers food safety in depth: five foodborne diseases prevalent in Kenya, six preservation and storage methods, and the principles of food control from source to table. Water is covered through sources, sources of contamination, a four-category water-related disease classification table (water-borne, water-washed, water-based, and water-related insect-borne), and five household and community purification methods (boiling, chlorination, SODIS, filtration, and flocculation). Housing conditions and their associated diseases are discussed with reference to urban slum settings in Nairobi and Mombasa. Excreta disposal methods (VIP latrine, pour-flush, full sewerage, composting) and refuse disposal methods (sanitary landfill, incineration, composting, recycling, and open dumping) are each linked to disease prevention or risk. Ventilation and pollution (air, water, soil, noise) are covered with specific reference to biomass cooking fuel and indoor air pollution. The vector and vermin control section is organized as a nine-row reference table covering mosquitoes (Anopheles and Aedes separately), flies, rodents, fleas, bedbugs, ticks, snails, and lice with their associated diseases and control measures. The occupational health chapter defines occupational health and the five classes of occupational hazard (biological, physical, chemical, ergonomic, psychosocial), covers OSHA Kenya 2007 employer obligations, reviews special hazards at water treatment plants, slaughterhouses, sewage plants, and food processing facilities, and outlines the seven roles of the nurse in occupational health.
